Grilled Salmon "Finnish Wilderness"
It will be
not easy to prepare this meal at home, because in the cities
of Central Europe your neighbour mostly doesn't like if you light
a fire in the garden. In the wilderness of Finland it will taste
much better, as you can imagine from the picture. We had the
opportunity to try it near Ruka.
First a not too small fillet of Salmon is fixed on a board
of birch wood with little pins of juniper wood.
Twigs from
juniper trees are layed in strongly salted water. The fillet
is beaten with the twigs so that the juniper taste and salt penetrates
the meat.
A fire is
lighted and the board with the fillet is placed beside the fire.
Should it rain, it will be good to have the fire in a "kota".
In the heat of the fire the fillet is grilled. A simple side
dish could be potatoes cooked in the ash of the fire.
